Jessica's Pumpkin Chocolate Chip Muffins

These pumpkin pecan chocolate chip muffins are the perfect breakfast treat, or just great to have around the house when you crave something pumpkin.

Ingredients

  • ¼ cup lightly packed brown sugar
  • 3 Tbsp canola oil
  • 2 large farm fresh eggs
  • ½ tsp ground vanilla bean or 1 tsp pure vanilla extract
  • 1 cup unsweetened applesauce
  • 1 ½ cups white whole wheat flour
  • ½ cup old fashioned oats
  • ½ cup toasted pecans, chopped (optional)
  • 1 ¼ tsp baking soda
  • 1 Tbsp ground cinnamon
  • 2 tsp ground nutmeg
  • 1 tsp ground ginger
  • ¼ tsp ground allspice
  • ¼ tsp ground cardamom
  • ¼ tsp salt
  • 1-15 oz. can pumpkin
  • ½ cup dark chocolate chips

Preparation

Preheat oven to 350 degrees F. Add muffin liners to the muffin pan.

Place the first 4 ingredients into a large bowl. Hand whisk until well blended. Whisk in applesauce. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and remaining dry ingredients. Add dry ingredients to wet ingredients beating with a large rubber scraper until just moist. Stir inpumpkin and chocolate chips.

Spoon batter into the lined muffin pan. Bake 32-34 minutes until a long pick inserted into the muffins removes clean. Cool in pan for 10 minutes. Remove from pan and cool completely on wire rack. Enjoy!!!
